Like many people I like to eat organic food if I can, particularly carrots and tomatoes! Farming organically is essentially about good husbandry, ie care of the land and livestock but it's not an easy option. But, as I found on our farm in West Wales, it is so rewarding when you see the improvements in the land and livestock.

Making an organic product leads to some interesting ingredient choices. I have used Agave Syrup as the sweetener. Did you know that tequila is fermented from Agave Syrup? Agave syrup comes from only three producers in the world, all based in Mexico.
