Lizi's GoodCarb Walnut Brownies Ingredients 80g dark plain chocolate (ie 70% chocolate solids, eg Tesco Luxury Continental dark chocolate for home baking) 100g non-hydrogenated soft margarine (eg Flora) 133g fructose (Fruisiana or Tate &Lyle) 1tsp vanilla extract 2 medium free-range eggs 80g ground almonds 60g walnut pieces Method Grease and line a square tin with baking parchment, 8 x 8 x 2in or 200 x 200 x 50mm. Oven temperature should be 180C/350F/Gas Mk4 (160C if you have a fan oven). Place the chocolate in a bowl set over a pan of gently simmering water to melt. Meanwhile measure out the margarine and fructose into a bowl and whisk together until light and fluffy. Add the eggs and ground almonds and whisk again until well mixed. Add in the vanilla extract and melted chocolate and whisk again carefully, then add in the walnut pieces, and again whisk carefully until everything is well mixed. Pour into the tin, making sure it is evenly spread, but there is no need to be too fussy. Bake in the oven for 25/30 minutes and leave to cool in the tin for a few minutes before releasing from the tin. Leave the base paper on until cool enough to be stored. If you keep the brownies in the fridge, they will keep very well. Each 45g slice has a Glycaemic Load of 2g (2 GLs), so a lovely treat when you are having a busy day.
