Matt's High Protein Chocolate Chip Cookies
There are many ways to get your protein hit and doesn’t necessarily need to be in the form of a chicken breast. You could have it as a smoothie, scrambled eggs or if you’re on the move then try making these delicious high protein cookies I’ve created; perfect for a protein hit before or after a work out.

  1. Pre heat the oven to 180 degrees Celsius
  2. Line a 23cm x 30cm baking tray with parchment paper. Leave to one side
  3. Mill the Lizi’s High Protein granola in a blender until ‘flour-like’. Put to one side
  4. Put the eggs, xylitol and coconut oil into a mixing bowl. Using a handheld mixer whizz the ingredients until they are fully combined and slightly fluffy
  5. Stir in the granola flour, chocolate chips, vanilla, cinnamon and salt and then using the handheld mixer combine the mixture until you get a smooth consistency
  6. Using a spatula, spread the mixture into your pre-lined baking tray and pop in the oven
  7. Cook for 10 minutes
  8. Remove from the oven and leave to cool for 15 minutes and then using a round-ended knife cut the batch into squares
  9. Using a stainless steel spatula, gently ease out the cookie squares and place on a cooling tray
  10. Great to enjoy with friends post work out, or pop in a container and take in your gym bag. Guaranteed to be the envy of everyone!
