Olympian Salad

Instructions
  1. Put the lime juice in a jam jar along with the rest of the dressing ingredients. Put the lid on and give it a shake.
  2. Slice the bottom off the little gem lettuces and separate the leaves into a large flat bottomed dish. Chop the beetroot into small chunks and add to the lettuce. Peel the avocados just before serving, and chop lengthways into 8. Place in the bowl, add the vinaigrette once it’s been really shaken. Toss the salad and then scatter the granola over the top.
